Noodles with vege, minced fish and omelette


It's a rainy evening and too much trouble to go out just for dinner. So I made this simple dish for the family.


Nothing frivilous, just s few packets of instant noodles, plus the toppings for a healthier meal.

Ingredient:
Instant noodles, I used Indomee (chicken flavour)
Chopped garlic and shallots (amount according to desired)
Green Vegetable (I used 小白菜)
Mackerel Fish or other suitable meat
3 eggs plus 3 tbs water, beat till fluffy
Oil for the omelette and for stir frying the garlic/ shallots
Fresh chillies

Direction:
Boil the noodle until just turn soft, drain and set a side.
Boil the vege, drain and leave aside.
Heat up the frying pan, add enough oil to cover the pan, then pour the egg mixture in. Let the egg set before flipping it over. Dish up the omelete and cut into strips or slices.
In the same pan, fry the garlic and shallots till brown, there is no need to use too much oil. 2 tbs should be sufficient.
You can either stir fry the fish/meat or boil it (less oil)
Cut the chillies into strips.
When done cooking, add the fried garlic/ shallots to the noodle and mix well, add the seasoning from the original packaging. Top with veges, omelete and meat before adding the fresh chillies.

This dish is so easy to make, if you don't fancy the multistep cooking, all you need is to boil the noodle and add all the ingrdients (minus the fry garlic) before adding the seasoning powder, and you have your soup noodle instead of dry version.
