Busy weekdays meant dinner preparation needs to be fast and simple, sometimes it is also a good thing to prepare certain ingredients in advance.
I go for groceries marketing during the weekends, often buying enough for half a week of even a week's dinner supplies. Today's dinner is lotus soup that has been slow cooked while we were out for the day, and home made dumplings with green vegetables.
For the dumplings, I bought minced pork and wanton wrappers, and did the wrapping during the weekend, and then froze them in separate packets. To prepare the dish, I just bring a pot of water to the boil, and gently slot in the frozen dumpling (do not thaw). Boil the dumplings on medium fire for about 8 minutes or until they start to float freely.
For extra taste, dip with some soy sauce, chili or black vinegar and enjoy:)
Wanton (pork dumplings)
500g Minced pork
2 tbsp corn flour
1 Tbsp sesame oil
1Tsbsp Oyster sauce
1.5 tsp five spice powder (optional)
salt and pepper according to preference

Method:
Mix all the marinating ingredients into to pork and mix well.
Line a baking tray with baking paper.
Using a small butter knife, scoop a suitable amount of pork onto a wanton wrapper, then dab a little water at the corners and wrap it into a free form dumpling.
Repeat until all the meat is used up.
Depending on the size of the dumplings, about 30 to 35 dumplings can be made.
Freeze the dumpling together with the baking tray.
Upon freezing, pack the dumplings into separate bags, bearing in mind the number of dumpling you wish to boil for one meal later. Freezing the dumplings before packing means that they will not stick together.
To cook the dumplings, boil a pot of water, or to prepare soup dumplings, use some seasoning or chicken stock for the soup.
When the water starts to boil, add the frozen dumplings and cook for about 8 minutes until they start floating.
Scoop the dumplings out onto the serving dish, top with a little soya sauce and sesame oil.
The dumplings I prepared were enough to feed the hungry kids in 3 separate settings.
Enjoy with some blanched vegetable for a balanced healthy meal:)
